Hotel Indigo’s H2O Bistro
Atlantic Salmon
Keeping it simple and traditional is what it’s all about at H2O Bistro. Chef Aldo Baghara recently added broiled salmon with dill Hollandaise sauce to the Bistro’s new menu. Baghara, born in Chile, is more concerned with freshness, color, presentation and flavor than a complicated recipe with a multitude of ingredients. The fish he prepares is fresh Atlantic salmon topped with a traditional Hollandaise sauce and fresh dill, complemented by five different kinds of diced and sautéed potatoes and steamed veggies.
